8051 is a very old microcontroller. Tasks which are performed by 8051 can be easily performed by current advanced controllers Arduino, AtMega 16, etc. It is not important to learn 8051 first, you should start with AtMega 8 or 16. That will be beneficial.

 

In a nutshell, Arduino itself isn't a microcontroller but a microcontroller board with its own IDE and which comes with pre-tested software and hardware libraries. The Intel 8051 microcontroller actually refers to the whole family of 8-bit microcontrollers with numbers ranging from 8031 to 8751.

Arduino is programmed with a c/c++ 'dialect'. Most c/c++ will work but much of the standard libraries will not work. Many of the restrictions are made because of the little available RAM on the Arduino hardware.

When compared to other existing microcontrollers it has minimum power consumption and an easily programmable interface. It is available in a cheap amount and provides simple interfacing to analog circuits. As Arduino is available as an open-source it enables the user to build their kit.

Despite the more limited features and old architecture, the 8051 is still used in some wireless communication products. The latest HC-10 Bluetooth modules are based on 8051 core. Although 16-bit or 32-bit MCUs can replace the functions offered by 8051s, the 8-bit MCU is sufficient for many product developers.

 

The Arduino hardware is easy, the Arduino IDE is simple, and the code itself is much easier to comprehend (than trying to program an off-the-shelf microcontroller). That's a big part of why Arduino is so popular.
